Recipe:

Ingredients:

  • 1 lb ground pork
  • 2 cloves garlic, minced
  • 1 tablespoon fish sauce
  • 1 tablespoon sugar
  • 1 teaspoon black pepper
  • 1/4 cup fish sauce
  • 1/4 cup sugar
  • 1/4 cup lime juice
  • 1/2 cup water
  • 1 clove garlic, minced
  • 1 red chili, sliced (optional)
  • 8 oz rice noodles
  • 1 cup fresh herbs (mint, cilantro, basil)
  • 1 cup pickled carrots and daikon (optional)
  • Lettuce leaves

Instructions:

  1. Mix ground pork with garlic, fish sauce, sugar, and black pepper. Form into small patties or meatballs.
  2. Grill the pork patties over medium-high heat until cooked through and slightly charred, about 4-5 minutes per side.
  3. For the dipping sauce, combine fish sauce, sugar, lime juice, water, garlic, and chili in a bowl. Stir until the sugar dissolves.
  4. Cook the rice noodles according to package instructions. Drain and rinse under cold water.
  5. To serve, place a portion of rice noodles in a bowl. Top with grilled pork, fresh herbs, and pickled vegetables if using.
  6. Serve with dipping sauce on the side.
