Recipe:

Ingredients:

  • 4 salmon fillets
  • 2 cups cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 red onion, cut into wedges
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey
  • 1 tablespoon Dijon mustard
  • Fresh basil leaves, for garnish

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. Arrange salmon fillets, cherry tomatoes, zucchini, and red onion on a baking sheet. Drizzle with olive oil, and season with salt and pepper.
  3. In a small saucepan, combine balsamic vinegar, honey, and Dijon mustard. Bring to a simmer over medium heat, stirring frequently until thickened.
  4. Brush the balsamic glaze over the salmon fillets.
  5. Bake for 20-25 minutes, until salmon is cooked through and vegetables are tender.
  6. Garnish with fresh basil leaves before serving.
