Ingredients:

  • 1 pound pork shoulder, thinly sliced
  • 1/4 cup fish sauce
  • 2 tablespoons sugar
  • 2 tablespoons soy sauce
  • 2 tablespoons minced lemongrass
  • 1 garlic clove, minced
  • 1 tablespoon vegetable oil
  • 8 ounces rice vermicelli noodles
  • 1 cup shredded lettuce
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh Thai basil leaves
  • 1/2 cup julienned carrots
  • 1/2 cup julienned cucumber
  • 1/4 cup chopped peanuts
  • Nuoc cham dressing (fish sauce, lime juice, sugar, water, garlic, and chili)

Instructions:

  1. Marinate the Pork: In a bowl, combine fish sauce,sugar, soy sauce, minced lemongrass, garlic, and vegetable oil. Add the sliced pork and marinate for at least 30 minutes.
  2. Prepare the Noodles: Cook the rice vermicelli noodles according to the package instructions. Drain and rinse with cold water.
  3. Grill the Pork: Preheat a grill or grill pan over medium-high heat. Grill the marinated pork slices until cooked through and slightly charred, about 3-4 minutes per side.
  4. Assemble the Noodle Bowls: Divide the cooked vermicelli noodles among serving bowls. Top with grilled pork, shredded lettuce, fresh herbs, and julienned vegetables.
  5. Sprinkle with chopped peanuts and drizzle with nuoc cham dressing.
