- 2 cups canned chickpeas, drained and rinsed
- 2 tablespoons vegetable oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 tomatoes, chopped
- 2 teaspoons ground cumin
- 2 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon garam masala
- 1/2 teaspoon red chili powder
- 1 teaspoon salt
- 1/2 cup water
Instructions:
- Prepare the Base: In a large skillet, heat vegetable oil over medium heat. Add the chopped onion and sauté until golden brown. Add garlic and ginger, and cook for another minute.
- Add the Spices: Add ground cumin, ground coriander, ground turmeric, garam masala, red chili powder, and salt to the skillet. Stir well to combine. Add the chopped tomatoes and cook until they soften and break down, forming a thick sauce.
- Cook the Chickpeas: Add the chickpeas to the skillet and stir to coat them in the sauce. Add water and bring to a simmer. Cook for 10-15 minutes, allowing the flavors to meld together and the chickpeas to become tender.
- Serve: Garnish with fresh cilantro and serve hot with rice, bhature, or naan.
