Recipe:

Ingredients:

  • 12 rice paper wrappers
  • 1/2 pound shrimp, peeled, deveined, and cooked
  • 1/2 pound pork loin, cooked and thinly sliced
  • 4 ounces rice vermicelli noodles
  • 1 cup shredded lettuce
  • 1/2 cup fresh mint leaves
  • 1/2 cup fresh cilantro leaves
  • 1/2 cup fresh Thai basil leaves
  • 1/2 cup julienned carrots
  • 1/2 cup julienned cucumber

Instructions:

  1. Prepare the Ingredients:  Cook the rice vermicelli noodles according to the package instructions. Drain and rinse with cold water.
  2. Assemble the Spring Rolls: Fill a large bowl with warm water. Dip one rice paper wrapper into the water for about 5 seconds, until it softens. Lay it flat on a clean surface.
  3. Serve: Serve the Goi Cuon with a side of hoisin-peanut sauce or nuoc cham dipping sauce.
