Ingredients:
- 1 cup mixed vegetables (carrots, cabbage, bell peppers, beans), finely chopped
- 1 onion, finely chopped
- 3 cloves garlic, minced
- 1-inch piece ginger, grated
- 2 green chilies, finely chopped
- 2 tbsp soy sauce
- 1 tbsp vinegar
- 1 tbsp cornflour (cornstarch) mixed with 2 tbsp water
- 4 cups vegetable broth
- 2 tbsp oil
- Salt and pepper to taste
- 1/2 cup fried noodles for garnish
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a large pot over medium heat. Add garlic, ginger, and green chilies, and sauté until fragrant.
- Add chopped onions and sauté until they turn translucent.
- Add mixed vegetables and cook for 3-4 minutes until they are slightly tender.
- Pour in the vegetable broth, soy sauce, and vinegar. Bring to a boil.
- Reduce heat and let the soup simmer for 10 minutes.
- Stir in the cornflour mixture to thicken the soup. Simmer for another 2-3 minutes.
- Season with salt and pepper to taste.
- Serve hot, garnished with fried noodles and fresh coriander leaves.
