Recipe:

Ingredients:

  • 2 tablespoons oil
  • 1 large onion, finely chopped
  • 1 bell pepper, finely chopped
  • 2 tomatoes, chopped
  • 2 cups mixed vegetables (potatoes, carrots, peas, etc.), boiled and mashed
  • 1 tablespoon ginger-garlic paste
  • 2 tablespoons Pav Bhaji masala (available at Indian grocery stores)
  • 1 teaspoon chili powder
  • 1/2 teaspoon turmeric powder
  • Salt to taste
  • 1 tablespoon lemon juice
  • Fresh cilantro, chopped (for garnish)
  • 8 pav (bread rolls)
  • 2 tablespoons butter

Instructions:

  1. Heat oil in a large pan over medium heat. Add onions and sauté until golden brown.
  2. Add ginger-garlic paste and cook for another minute. Add bell pepper and tomatoes, cooking until tomatoes are soft.
  3. Stir in Pav Bhaji masala, chili powder, turmeric, and salt. Cook for a few minutes.
  4. Add the mashed vegetables to the pan and mix well. Cook for 5-7 minutes, adding water if needed to reach desired consistency.
  5. Stir in lemon juice and garnish with fresh cilantro.
  6. To prepare the pav, heat butter in a pan and toast the bread rolls until golden brown.
  7. Serve the bhaji hot with toasted pav and lemon wedges on the side.
