Ingredients:
- 2 tablespoons oil
- 1 large onion, finely chopped
- 1 bell pepper, finely chopped
- 2 tomatoes, chopped
- 2 cups mixed vegetables (potatoes, carrots, peas, etc.), boiled and mashed
- 1 tablespoon ginger-garlic paste
- 2 tablespoons Pav Bhaji masala (available at Indian grocery stores)
- 1 teaspoon chili powder
- 1/2 teaspoon turmeric powder
- Salt to taste
- 1 tablespoon lemon juice
- Fresh cilantro, chopped (for garnish)
- 8 pav (bread rolls)
- 2 tablespoons butter
Instructions:
- Heat oil in a large pan over medium heat. Add onions and sauté until golden brown.
- Add ginger-garlic paste and cook for another minute. Add bell pepper and tomatoes, cooking until tomatoes are soft.
- Stir in Pav Bhaji masala, chili powder, turmeric, and salt. Cook for a few minutes.
- Add the mashed vegetables to the pan and mix well. Cook for 5-7 minutes, adding water if needed to reach desired consistency.
- Stir in lemon juice and garnish with fresh cilantro.
- To prepare the pav, heat butter in a pan and toast the bread rolls until golden brown.
- Serve the bhaji hot with toasted pav and lemon wedges on the side.
