Recipe:

Ingredients:

  • 500g pumpkin, peeled and cubed
  • 1 onion, finely chopped
  • 2 tomatoes, chopped
  • 2 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 1 green chili, chopped
  • 1 tsp cumin seeds
  • 1 tsp mustard seeds
  • 1 tsp turmeric powder
  • 1 tsp coriander powder
  • 1 tsp garam masala
  • 200ml coconut milk
  • Salt to taste
  • 2 tbsp oil
  • Fresh coriander leaves for garnish

Instructions:

  1. Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
  2. Add chopped onions, garlic, ginger, and green chili. Sauté until the onions are golden brown.
  3. Add tomatoes and cook until they soften and release oil.
  4. Add turmeric, coriander powder, and salt. Mix well.
  5. Add pumpkin cubes and stir to coat them with the spices.
  6. Pour in the coconut milk, reduce heat, and cover the pan. Let it simmer until the pumpkin is tender (about 15-20 minutes).
  7. Stir in garam masala and cook for another 2-3 minutes.
  8. Garnish with fresh coriander leaves and serve hot with rice or flatbreads.
