Recipe:
Ingredients:
- 500g pumpkin, peeled and cubed
- 1 onion, finely chopped
- 2 tomatoes, chopped
- 2 cloves garlic, minced
- 1-inch piece ginger, grated
- 1 green chili, chopped
- 1 tsp cumin seeds
- 1 tsp mustard seeds
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp garam masala
- 200ml coconut milk
- Salt to taste
- 2 tbsp oil
- Fresh coriander leaves for garnish
Instructions:
- Heat oil in a pan over medium heat. Add cumin seeds and mustard seeds, and let them splutter.
- Add chopped onions, garlic, ginger, and green chili. Sauté until the onions are golden brown.
- Add tomatoes and cook until they soften and release oil.
- Add turmeric, coriander powder, and salt. Mix well.
- Add pumpkin cubes and stir to coat them with the spices.
- Pour in the coconut milk, reduce heat, and cover the pan. Let it simmer until the pumpkin is tender (about 15-20 minutes).
- Stir in garam masala and cook for another 2-3 minutes.
- Garnish with fresh coriander leaves and serve hot with rice or flatbreads.
