Ingredients:

  • 1 pound pork tenderloin, cut into bite-sized pieces
  • 1/4 cup cornstarch
  • 1/4 cup all-purpose flour
  • 1 egg, beaten
  • Vegetable oil for frying
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1/2 cup pineapple chunks
  • 1/2 onion, chopped

Instructions:

  1. Prepare the Pork: In a bowl, combine cornstarch and flour. Dip the pork pieces into the beaten egg, then coat with the cornstarch-flour mixture. Heat vegetable oil in a deep pan or wok over medium-high heat. Fry the pork pieces until golden brown and crispy. Remove and drain on paper towels.
  2. Prepare the Sauce: In a small bowl, mix together ketchup, rice vinegar, sugar, soy sauce, cornstarch, and water. Set aside.
  3. Cook the Vegetables: In a large skillet or wok, heat a little vegetable oil over medium-high heat. Add the bell peppers and onion, stir-frying until tender-crisp. Add the pineapple chunks and stir to combine.
