Recipe:

Ingredients:

  • 4 medium potatoes, peeled and diced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 12 corn tortillas
  • Oil for frying
  • Fresh salsa, avocado, and cilantro for garnish

Instructions:

  1. Boil potatoes in a large pot of salted water until tender. Drain and mash.
  2. In a pan, heat a little oil and sauté onions until soft. Add garlic and cook for another minute.
  3. Stir in mashed potatoes, cumin, smoked paprika, salt, and pepper. Mix well and cook for 2-3 minutes.
  4. Heat tortillas in a dry skillet until pliable. Place a spoonful of potato mixture in each tortilla and fold in half.
  5. Heat oil in a frying pan over medium heat. Fry the tacos until crispy and golden brown on both sides.
  6. Drain on paper towels and serve hot, topped with fresh salsa, avocado slices, and cilantro.
