Ingredients:
- 12 oz pasta (penne or fusilli)
- 1 cup cherry tomatoes, halved
- 1 zucchini, sliced
- 1 bell pepper, julienned
- 1 cup broccoli florets
- 1/2 cup peas
- 2 cloves garlic, minced
- 1/4 cup olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions:
- Cook the pasta according to the package instructions. Drain and set aside.
- Heat olive oil in a large pan over medium heat. Add the minced garlic and sauté until fragrant.
- Add the zucchini, bell pepper, and broccoli. Cook for 5-7 minutes until the vegetables are tender.
- Add the cherry tomatoes and peas. Cook for another 2-3 minutes.
- Add the cooked pasta to the pan. Sprinkle with dried oregano, dried basil, salt, and pepper. Toss well to combine.
- Garnish with fresh basil leaves and serve hot.
