Recipe:

Ingredients:

  • 12 oz pasta (penne or fusilli)
  • 1 cup cherry tomatoes, halved
  • 1 zucchini, sliced
  • 1 bell pepper, julienned
  • 1 cup broccoli florets
  • 1/2 cup peas
  • 2 cloves garlic, minced
  • 1/4 cup olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions:

  1. Cook the pasta according to the package instructions. Drain and set aside.
  2. Heat olive oil in a large pan over medium heat. Add the minced garlic and sauté until fragrant.
  3. Add the zucchini, bell pepper, and broccoli. Cook for 5-7 minutes until the vegetables are tender.
  4. Add the cherry tomatoes and peas. Cook for another 2-3 minutes.
  5. Add the cooked pasta to the pan. Sprinkle with dried oregano, dried basil, salt, and pepper. Toss well to combine.
  6. Garnish with fresh basil leaves and serve hot.
