- 8 small corn tortillas
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 red bell pepper, diced
- 1 avocado, sliced
- 1 cup shredded lettuce
- 1/2 cup diced tomatoes
- 1/4 cup chopped red onion
- 1/4 cup chopped cilantro
- 2 tbsp olive oil
- 1 tsp cumin powder
- 1 tsp chili powder
- Salt and pepper to taste
- Lime wedges for serving
Instructions:
- Heat olive oil in a pan over medium heat. Add the red bell pepper and sauté until softened.
- Add the black beans, corn kernels, cumin powder, chili powder, salt, and pepper. Cook for 5-7 minutes until everything is heated through.
- Warm the tortillas in a dry pan or microwave.
- Assemble the tacos by filling each tortilla with the bean and corn mixture, shredded lettuce, diced tomatoes, avocado slices, red onion, and cilantro.
- Serve with lime wedges on the side.
