Recipe:

Ingredients:

  • 8 small corn tortillas
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 red bell pepper, diced
  • 1 avocado, sliced
  • 1 cup shredded lettuce
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped red onion
  • 1/4 cup chopped cilantro
  • 2 tbsp olive oil
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Lime wedges for serving

Instructions:

  1. Heat olive oil in a pan over medium heat. Add the red bell pepper and sauté until softened.
  2. Add the black beans, corn kernels, cumin powder, chili powder, salt, and pepper. Cook for 5-7 minutes until everything is heated through.
  3. Warm the tortillas in a dry pan or microwave.
  4. Assemble the tacos by filling each tortilla with the bean and corn mixture, shredded lettuce, diced tomatoes, avocado slices, red onion, and cilantro.
  5. Serve with lime wedges on the side.
